They founded "Clean Line" for the production of the traditional drink of the Caucasian and Turkic peoples, Tan, in 2000, investing $ 5,000 in the business. We bought boilers and cans, rented a warehouse of a former grocery store near Solnechnogorsk for $ 400 a month. They hired several workers, but sometimes they themselves worked in the "workshop" at night.

Entrepreneurs immediately divided the spheres of business: Gagik took up production technology, Tigran - economics. At first, Chistaya Liniya's production was not much different from home production. Milk was purchased from collective farms near Moscow, and 100 liters of tan were produced per day. Gagik delivered products to Moscow restaurants in his own car.

By 2002, the company began operating on the basis of the Krasnaya Niva collective farm near the town of Dolgoprudny. For three years, a milk processing plant has grown on its territory, in which businessmen have invested several hundred thousand dollars of loans taken from Fora Bank.

After the launch of the plant, Chistaya Liniya began to produce about 10,000 tons of fermented milk products per year. At the same time, the idea arose to organize a goat farm: for this, cowsheds were bought on the Rassvet collective farm in the Dmitrovsky district. The company did not immediately learn to produce milk without a specific goat smell. At first they tried to keep Russian goats, but their milk yield was low - 200-500 g per day. As a result, the leaders chose Alpine, Nubian and Saanen goats, which produce three to six liters of milk per day.

The shelf life of tans is longer than that of conventional sour milk, therefore the margin was higher - up to 15%. This helped the company to survive in the first phase. To expand the consumer audience, they focused on the health properties of tan. Fat-free versions of the drink have appeared.

The first large chains for Chistaya Liniya were Seventh Continent and Azbuka Vkusa. Unlike competitors, the company decided to take a higher price segment. "Clean Line" guessed the market trend, offering a new fashionable product for the market in different packaging, different fat content, so there were no interruptions in supplies.

When the company started producing skim tan in 2007, there were still large volumes of cream that sometimes had to be poured out. And then the idea came to make ice cream. The first product was a popsicle on a stick with a taste similar to ice cream from childhood. The packaging was made simple and nostalgic - the popsicle was wrapped in silver foil.

Chistaya Liniya began to supply ice cream to Azbuka Vkusa, and at that time it was the only ice cream made from natural cream. In 2007, Iceberry offered Chistaya Liniya to produce the Filevskoe popsicle for it. Already in 2009, Filevskoye took the third place in sales after Lakomka and Leningradskoye, long-term sales leaders. As a result, the company got it right with marketing: ice cream in the style of the 60s immediately resonated with customers. In 2008, Chistaya Liniya sold 2,000 tons of ice cream, which at that time accounted for 50% in monetary terms in the company's sales structure.

In 2014, experts from NP Roskontrol conducted an examination of the six most popular Russian ice cream brands, the labels of which indicate that the ice cream is made in accordance with GOST. In addition, the experts checked the Swiss expensive ice cream in the laboratory to find out whether its cost corresponds to the quality and whether it differs greatly from other competitors.

The following brands were selected for testing: "USSR", "Gold Standard", "Family Iceberry", "Vkuslandiya", "Nestle 48 kopecks", "Chistaya Liniya" and Movenpick.

All ice cream brands were assessed in terms of consumer safety, product quality, health and taste. Each ice cream was tested in the laboratory for the presence of microbes and bacteria, yeast, preservatives.

Experts checked the content of vegetable fats, sugar, fat content of the products and the compliance of the information declared by the manufacturer on the label with reality. Having evaluated each brand on a 100-point scale, Roskontrol presented a rating where the Chistaya Liniya ice cream took first place with 62 points.

Ice cream "Chistaya Liniya" is the only ice cream made with natural milk. It was this brand that the experts gave their preference for in terms of taste. This ice cream contains no vegetable fats, the sugar and fat content are on the label, and there are no germs, bacteria, yeast or preservatives. It is the leader among the selected brands. In 2017, the brand owners launched O! Eskimo, a mini ice cream production facility in the form of an island in a shopping center. Initially, we wanted to avoid the images that are used when promoting ice cream in Russia: references to Soviet GOST standards or to family values ​​in the traditional sense. At the same time, it was important to carry through the entire concept the basic property of the "Pure Line" - the exceptional naturalness of the product. If you look at the composition of our ice cream, it is always natural ingredients: organic milk, cream, condensed milk, honey, chocolate, Altai cranberries.

On Saturday, April 22nd, I was invited on an excursion to the Chistaya Liniya ice cream factory with a visit to their bio-farm. There were 50 bloggers from Moscow and St. Petersburg.

The plant is located in the city of Dolgoprudny in the Moscow region.

We were warmly greeted with cakes prepared by the factory's confectioners from their dairy products, wine and sweets.

The history of the plant began at the dawn of the 2000s with the production of ethnic drinks (tan, ayran), then yoghurt products appeared. In 2006, the owners realized that they were accumulating a lot of cream (sterilized and butter). We tried to make ice cream, found old forms - in foil, on a stick. In the end, everything worked out, and now the Chistaya Liniya brand occupies high places in the Moscow region and in the constituent entities of the Russian Federation.

The plant carries out home delivery in branded cars (dry ice is put in the container). Large ice cream vans charge up to -40° C. Along with the packages ordered by the customers, a “false” package is carried in the car, which is used to check the condition of the ice cream upon returning to the factory.

Milk is brought from the dairy farms of the plant a few hours after milking, all milk carriers are equipped with mini-laboratories for milk quality control.

We went to the warehouse where the temperature is -28° S. We were given warm jackets. We watched a pallet move at a great height - a huge container with ice cream. The only warm place in the warehouse is the floor, Tigran Matinyan said, otherwise the foundation will crack.

Many excursions are held at the plant, mainly for children, reaching up to a thousand tourists a day, master classes, tastings are arranged for children, and then a sweet gift is brought home in the form of a set of ice cream. There is a quarantine zone in the warehouse area, where the quality of the received raw materials is checked.
There is a warm warehouse where packaging, lids, labels, corrugated packaging, containers, popsicle sticks are stored. For example, while using Belgian sticks Knauf , but soon two Russian enterprises will supply domestic sticks. There are 1,500 pallet places in the warehouse.

Then we watched the machines baking waffle cups in the workshop. Before entering the workshop, we put on hats, gowns and shoe covers and disinfected our hands with a solution. The Austrian equipment bakes 8,500 waffle cups per hour!

Tanks with milk are standing nearby, which is boiled, then brought to 75° C, add cream, condensed milk, sugar, bring back to 75° C and cook for 45 minutes. Then the mixture is homogenized, cooled to 2° C in an apparatus-cooler with ice water. The mixture then matures for 24 hours (12-48 hours). Pasteurization of milk changes the structure of lactose - milk sugar, it caramelizes and takes on a pleasant shade.

“Chistaya Liniya” plant does not use vegetable oil, coconut oil or any other oil, ”Tigran Matinyan told me.

Chistaya Liniya is a conglomerate of manufacturing, supplying and packaging companies, employing a total of about 3,000 people. About 115 people work on one production shift at the plant, they work according to the Labor Code (2 through 2, including on the night shift and on New Year's, because the cows are constantly milked).

During production, GOSTs are observed (allowed no earlier than 2003 by law), so the ice cream is made in accordance with GOST 31457-2012.

Today, the range of "Chistaya Liniya" includes about 100 items, including dairy and sour milk products, ice cream, cheeses, cottage cheese and much more.

On the lines for the molding and packaging of cups with ice cream, popsicle on a stick and popsicle-tree in glaze, we saw all the stages of this process. The spectacle, I must say, is mesmerizing. As for the popsicle, two methods of packing are used for it on two lines of different design (one of which is more modern).

We also took part in the presentation of the project "About popsicle" - a kind of kiosks-constructors of ice cream intended for retail outlets. You yourself choose one of 5 types of popsicle (chocolate, crème brulee, apricot, strawberry, vanilla) and from three types of glaze (white, milk and dark chocolate), and with you the ice cream maker creates it (the glaze freezes immediately, but not hard - Mmm!). I ate an apricot (with pieces of soft dried apricots) in a dark chocolate glaze. And I tried the new frosting with butter and vanilla with grains of chocolate.

This is not counting the fact that I ate a glass with an ice cream that had not yet hardened on the line. I felt like a child!

I spoke with the chief technologist of the plant Shayakhmetova Vera Viktorovna about stabilizers. It turns out that in Soviet ice cream, they also used, as they are called, stabilization systems - nothing without them, otherwise the ice cream will melt and will not keep its shape. But then they were cheap - flour, starch. Now there is access to natural stabilizers - citrus fibers, algae, carrageenan, locust bean gum. She talked about extruding ice cream and preventing melt from shock warming. Ice cream "Chistaya Liniya" has good overrun, there are no enlarged crystals, a low-temperature freezer is used - up to -9° WITH.

The secret of the "Clean Line" taste in two-stage freezing (usually with one-stage - poor overrun and temperature 4° C), - said Vera Viktorovna. Lecithin - an emulsifier - provides uniformity. At the same time, no artificial additives and flavors.

Tigran Matinyan said that in the first place in demand is the popsicle, followed by a glass, a cone and a large package. More often, ice cream is a product of an impulse purchase (this is when I was walking, and suddenly I bought it for the last 100 rubles), then a family purchase follows. Chistaya Liniya produces ice cream for Gorky Park and VDNKh (with their design).

Today Chistaya Liniya is # 1 in terms of sales, 21% of the entire ice cream market in Moscow! The clean line is exported to China and the USA.

Milk is brought to the plant from different partner farms. We went to one of these experimental bio-farms after a tour of the factory. There are very clean cows who are fed with ground grain, no GMOs, no silos and no ready-made feed. The cows are free, the calves walk next to their mothers.
There are also buffaloes, goats and domesticated hogs and donkeys on the farm.

And after us there was a feast, which I had not been to. Probably, this is how I imagine an Armenian wedding - lamb and pork shashlik, ripe vegetables and greens, khachapuri, khinkali, pilaf. And then, when we almost burst, they brought mountain trout with shrimps boiled in farm cream. And wine, and tabouleh, and cheese. But that's not all - then again the cakes from the confectioners of the plant, and I could not resist - I ate a basket of raspberries). We were presented with commemorative certificates and presented with milk, a can in a retro style and a branded mug in a bag. It was royally!

Anyone over the age of six is ​​invited there. The first excursion takes place at nine forty-five, the last at eighteen thirty. The group gathers from fifteen to forty-nine people.
