If the smell is like a rotten sausage or old socks - a sample of rancid, and there are no polyphenols in it.
  6. The taste of olive oil can be said to be "clean", "fresh", "herbal". The olive oil should be bitter. But the degree of bitterness, like the color, depends on the feedstock.
